Value addition of jack through dehydration

It is observed that jackfruit is considered as a menace during its plentiful availability during April to June month.  But during off seasons there is a great demand for jackfruit. To ensure the year around availability of jackfruit, viable primary processing technology for dehydrated jackfruit (tender jack, raw jack, ripe bulbs and jack seed) has to be promoted. This will enable continuous supply and availability of more than a dozen of jack products in the market throughout the year or as such it can be marketed.
